MAPPALE 1106
A wine from the highest vineyard in the denomination (470 metres above sea level), from vines over 90 years old with a DNA to be preserved. Everything is done by man, no machines. on unique and difficult to work soils with perfect southern and southeastern exposure.
Mappale is a different product by choice, a Sur Lie prosecco with the yeasts remaining inside the bottle.
We use the ancestral method: natural second fermentation in the bottle with indigenous yeasts. Maceration is pellicular.
Mappale 1106 is a concentration of vital energy.
Soil biodiversity – the flora: countless flowers and herbs, some unknown; various trees, including chestnut trees, famous in Combai for the PGI chestnuts.
Soil biodiversity – fauna: butterflies, bees goats and chamois and many more species. Cosmic forces: lunar phases for field work and bottling with the first quarter of the moon. Vine protection: agricultural fertilisation from stables, no use of systemic products.
